Karakteristiknya kenyal, elastis, dan sensasi dalam mulut yang lembut. Ya, itulah produk pangan kwetiau. Melalui diskusi dengan dosen, Cindy Felicia Hardi mengembangkan variasi produk kwetiau menggunakan bahan baku utama beras hitam. \u201cUmumnya kwetiau menggunakan pati jagung-maizena, sedangkan dalam penelitian ini saya menggunakan pati gandum. Penambahan pati dapat membantu memperbaiki karakteristik kwetiau beras hitam karena adanya amilosa dan amilopektin yakni bagian dari pati yang memiliki perbedaan struktur sehingga karakter yang dihasilkan berbeda pula,\u201c ungkap mahasiswa Fakultas Teknologi Pertanian Universitas Katolik Widya Mandala Surabaya (FTP UKWMS) ini.<\/p>\n<p>Menggunakan bahan baku utama yang berbeda, tentu kandungan gizi yang ada dalam kwetiau beras hitam berbeda pula. Kandungan serat, protein, dan senyawa antioksidan dalam bentuk antosianin dinilai lebih tinggi dibandingkan dengan beras putih. Menghasilkan variasi produk pangan ini, Cindy total membutuhkan waktu lima bulan agar didapatkan formula, tekstur dan karakteristik kwetiau yang dapat diterima masyarakat. Untuk itu, Cindy melakukan pengujian terhadap 100 orang panelis. Hingga didapatkan hasil, kwetiau beras hitam dengan penambahan pati gandum sebesar 10% paling disukai, terutama untuk kekenyalan dan kesukaan terhadap kelembutan kwetiau saat di dalam mulut dari segi organoleptik.<\/p>\n<p>\u201cJika dari segi kandungan gizi berbeda, namun rasa yang dihasilkan tidak terlalu berbeda. Hanya saja ada rasa khas yang mirip seperti ketika kita mengkonsumsi beras ketan hitam. Namun hal ini tidak terlalu berpengaruh,\u201d ungkap dara kelahiran Banjarmasin ini. Menggunakan beras hitam bukan berarti tanpa kendala, proses pembuatan terutama pada tahap pencetakan karena sulitnya mendapatkan permukaan adonan yang rata; dan pada tahap pengukusan untuk tetap menjaga suhu pengukusan. Merampungkan skripsinya, Cindy dibimbing oleh Drs. Sutarjo Surjoseputro, MS., dan Erni Setijawati, S.TP., MM.<\/p>\n<p>Dara yang pernah bergabung dalam organisasi mahasiswa tingkat fakultas Badan Eksekutif Mahasiswa (BEM) FTP UKWMS ini menyatakan bahwa penelitian ini masih dapat dikembangkan, misal dari segi penyimpanan maupun variasi bahan.
